The Story

Dahi papdi chaat is, in many ways, the dish that other curd-based chaats descend from — a foundational recipe in North Indian and Gujarati chaat culture that predates the smaller, puri-based variations now found on every street corner. Where dahi puri uses a small, rounded, hollow shell, papdi chaat relies on the papdi itself: a flat, slightly thick, crisp disc of fried dough that holds its shape and structure under a generous pile of toppings without collapsing — a small but important distinction that changes the entire eating experience. Because papdi is sturdier than puri, this chaat allows for a more deliberate, layered build. Curd is spooned on generously and left to settle into every crevice, sprouted or boiled moong adds substance and a pleasant bite, and the two chutneys — herbal green and tangy-sweet tamarind — are drizzled with enough precision that every papdi gets its share of both. Sev goes on last, along with pomegranate for color and bursts of tartness, and a final dusting of roasted cumin, chaat masala, and rock salt ties the whole composition together.
